When dairy inspector Ansel Bruch arrived for the quarterly grading visit, he found the newest batch of reserve wheels each marked with a red chalk X — a mark that means reject — though every wheel had passed its taste test the week before. Tucked behind the humidity gauge was a short strip of waxed paper bearing a message in block capitals, folded once and still faintly smelling of brine.
