The Aging Wheel
≈ 6 min
When apprentice cheesemaker Dora Speck carried the morning's brine brush into the ripening cave at half past five, she found one of the prize reserve wheels overturned on the cave floor — and a strip of waxed paper tucked beneath it, pressed flat by the cheese's weight. The paper bears a short encoded message. Nobody else was supposed to have a key to the cave.
The scene
Fromagerie Belacqua, Valdorne — the ripening cave, a long tunnel carved into the mountain beneath the dairy, where hundred-kilogram wheels of alpine cheese rest on fir-plank shelves, temperature is kept at ten degrees by the rock itself, and a humidity gauge hangs beside the iron door at the cave's mouth
