The Rind and the Record
≈ 4 min
Head cheesemaker Annelies Fehr came down to the salt-rubbing cellar at first light to find the newest batch of reserve rounds untouched — and the dairy's private recipe folio missing from its shelf. Tucked under the empty folio stand was a folded strip of wax paper bearing a short message in block letters, held flat by a salt-encrusted rubbing stone.
The scene
Grünwald Alpine Dairy, the salt-rubbing cellar — a low vaulted room cut from living rock beneath the main dairy, where rounds of mountain cheese rest on spruce-wood planks and a single oil lantern hangs from an iron hook above the tasting table
